Baked Chicken Tenders

Ingredients:

1 lb chicken tenders
2 tbsps light mayonnaise
1/2 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese


Directions:

Preheat Oven to 425°F.
Mix chicken tenders and mayonnaise in a bowl to lightly coat chicken with mayonnaise.
Mix bread crumbs and cheese in a gallon-size zippie bag.
Prepare baking sheet with cooking spray.
Put 1-2 chicken tenders in the zippie bag with the bread crumbs and shake to coat.
Place chicken tenders in a single layer on prepared baking sheet.
Continue until all tenders are coated and on the baking sheet.
Bake in preheated oven for 8 minutes. Gently flip each one, so as not to remove the breading, and bake for an additional 8 minutes.
Serve with your favorite dipping sauce.

Yellow Cab Pizza's Charlie Chan Chicken Pasta

Ingredients:

1 whole boneless chicken breast
1/3 cup olive oil
3 tbsps sesame oil
1 onion
2 cloves garlic
1 1/4 tbsps char siu sauce (Lee Kum Kee brand)
1/4 tsp chili-garlic sauce
9 tbsps oyster sauce
1/8 cup sugar
4 tbsps water
1 kg cooked pasta
peanuts (optional)


Directions:

Mix sesame oil, char siu sauce, oyster sauce, chili garlic, and sugar in a bowl. Set aside.

Sauté onion and garlic in oil.

Cook chicken until brown.

Add mushroom and liquid mixture to chicken and simmer for a few minutes.

Stir in pasta and mix with pasta until well coated with sauce.

Sprinkle peanuts and serve.
