Strawberry Nutella Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tsps baking powder
  • 1/2 cup sugar
  • 1/4 cup canola oil
  • 1 egg
  • 1/3 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup chopped fresh strawberries
  • 1/3 cup Nutella
  • Turbinado sugar, for sprinkling on top of muffins

Directions:


Preheat oven to 350 degrees. Line a muffin tin with paper liners or grease well. Set aside.

In a medium bowl, whisk together the flour, salt, baking powder, and sugar.

In a small bowl, combine canola oil, egg, buttermilk, and vanilla together. Use a fork or whisk and mix until well combined.

Incorporate the wet ingredients into flour mixture. Add slowly and gently stir, you don’t want to over mix. The batter will be thick. Carefully fold in the strawberries.

Fill each muffin cup half way with batter. Next, add a small spoonful of Nutella to each muffin cup. Cover the Nutella filling with the remaining batter. Sprinkle each muffin with turbinado sugar.

Steamed Spareribs with Black Bean Sauce

Ingredients:

  • 1-1/2 lbs pork spare rib (rib tips)
  • 2 tbsps black bean sauce
  • 1 tbsp Chinese rice wine (or dry sherry)
  • 2 tsps cornstarch
  • 1/2 tsp grated ginger (on microplane grater)
  • 2 cloves garlic, minced
  • 1/4 tsp ground black pepper
  • 1 tsp cooking oil
  • 1 tsp sesame oil
  • 1 tsp sugar

Directions:


Cut the spareribs crosswise into 1" - 2" sections. Combine the rest of the ingredients. Transfer spareribs and sauce into a shallow, heatproof pan that will fit inside your wok (a pie plate or 9” cake pan works great.) Let marinate at room temperature for 30 minutes.

Set steaming rack inside of wok and fill with water almost up to height of rack. Turn heat to high and when water is boiling, turn heat to medium-high. Set pan with spareribs on top of a steaming rack in wok. Steam on med-high heat for 18-20 minutes until ribs are no longer pink. Make sure that when you are steaming that you don't run out of water in the wok. Replenish with additional water, if needed.

Korean Roast Chicken Thighs

Ingredients:


  • 8 chicken thighs, skin on
  • 1/2 cup soy sauce
  • 1/2 cup minced green onion
  • 3 tablespoons sesame oil
  • 3 tablespoons honey
  • 2 teaspoons minced garlic or 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon black pepper

Directions:


Preheat oven to 375 degrees.

Place chicken skin side down in a large baking dish.

Combine the remaining ingredients in a bowl and then pour on top of the chicken.

Bake uncovered for 45 minutes.

Turn the chicken over in the dish and bake for another 15 minutes.

Apple Muffins

Ingredients:

  • 2 cups sugar (or use 1 1/2 cups for a less sweet muffin)
  • 2 eggs
  • 1 cup oil
  • 1 Tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups peeled, cored, diced apples (around 3 apples)
  • Brown sugar for topping (around 1/2 cup)

Directions:


Preheat oven to 350 degrees and line muffin pan with paper liners.

Cream together sugar, eggs, oil, and vanilla. Sift flour, baking soda, salt, and ground cinnamon.

Add dry ingredients to creamed mixture and mix until combined. The batter will be very thick.

Add the diced apples.

Fill paper liners almost to the top, about 3/4 of the way full.

Sprinkle with brown sugar.

Bake at 350 degrees for 20-24 minutes. Makes 18 muffins.

Blueberry Cream Muffin

Ingredients:


  • 2 eggs
  • 1 cup white sugar
  • 1/2 cup vegetable oil
  • 1/2 tsp. vanilla extract
  • 2 cups flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 cup sour cream 
  • 1 cup blueberries
Directions:

Preheat oven to 400 degrees F (200 degrees C).

Grease 12 muffin cups or line with paper muffin liners.

In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda.

Stir dry ingredients into egg mixture alternately with sour cream.

Gently fold in blueberries.

Scoop batter into prepared muffin cups.

Bake in preheated oven for 20 minutes.

Lemon Roasted Chicken

Ingredients:

  • 1 whole organic chicken (about 5lbs)
  • salt and pepper
  • juice of 2 lemons, shells retained
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon yellow mustard
  • 2 teaspoon dried oregano
  • 2 teaspoon dried thyme
Directions:

Preheat the oven to 400 degrees F. Wash chicken well inside and out and pat dry. Season well with salt and pepper and stuff squeezed out lemon halves into cavity. Place chicken breast down on the rack in a shallow roasting dish.

Combine lemon juice, olive oil, mustard, oregano, and thyme in a bowl and brush over chicken.

Bake 60-70 minutes, making sure to turn chicken over at halfway point and basting it regularly with juices from the pan. The chicken should reach350 degrees F when done. When the chicken is done, cover in aluminum foil and let rest for about 10 minutes. Serve hot with pan juices.

Chewy Chocolate Chip Cookies

Ingredients:
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 2 cup all purpose flour
  • 2 tsp. cornstarch
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup bittersweet chocolate chips

Directions:
1. Preheat oven to 350 degrees F.

2. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.

3. Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.



4.  Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)

5. Let cool, on the sheet, on a wire rack for five minutes. Remove from baking sheet and let cool completely. Makes approximately 3 dozen.
